This Michelin is famous for its vegetables.
But what I want to say in particular is that the tuna sashimi made by Koyanagi is the least greasy I have ever eaten.
The meat is not very soft, but it is not very hard and elastic.
When you bite it, the meat just sticks to the teeth, which is completely different from the "fatty feeling" of tuna I have eaten before.
